Kingfish

Kingfish or King Mackerel are most abundant during the spring and summer months but there’s usually a good kingfish bite in December/January as well. Most of the winter kings are 10 to 20 pounds and larger smoker kings of 30 to 40 pounds are usually caught during the spring and summer months. The kingfish is built for speed and will often sky 10 to 15 feet out of the water when attacking it’s prey. Considered fare as table fare it’s an excellent fish for the smoker due to the oily texture.
